Instructions
Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.In a medium bowl, whisk the eggs, buttermilk, oil, and vanilla extract until combined.Pour the wet ingredients into the dry ingredients and mix until just combined.
Slowly stir in the hot coffee or hot water. The batter will be thin, but that's normal.
Divide the batter evenly between the prepared cake pans.
Bake for 30 to 32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
To make the frosting, beat the softened butter until creamy and light.
Gradually add the powdered sugar and cocoa powder, mixing on low speed to avoid a mess.
Add the heavy cream one tablespoon at a time until the frosting reaches a smooth, spreadable consistency.
Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top.
Add the second cake layer and frost the top and sides of the entire cake.Slice and serve.

Make sure all your wet ingredients, especially the eggs and buttermilk, are at room temperature for a smoother batter. In addition, do not overmix the batter once the wet and dry ingredients are combined, as this can make the cake dense.
