1tspDijon mustardAdds tang and depth
1tspWorcestershire sauceAdds savory depth
¼tspCayenne pepperOptional, for gentle heat
1pinchSaltTo taste
4cupsBread cubes, apple slices, and pretzelsFor serving/dipping
Instructions
Rub the inside of the fondue pot or saucepan with the halved garlic clove, then discard the garlic. This infuses a subtle aroma without overpowering the cheese.
In a bowl, toss the shredded cheddar cheese with the cornstarch until evenly coated. This step keeps the fondue smooth and prevents separation.
Pour the white wine into the saucepan and warm it over medium heat until it begins to simmer gently; do not let it boil.
Reduce the heat to low, then add the cheese a handful at a time, stirring constantly in a figure-eight motion until each addition is fully melted before adding more.
Once all the cheese is incorporated and smooth, stir in the Dijon mustard, Worcestershire sauce, cayenne pepper, and salt.Continue stirring for 1-2 minutes until the fondue is glossy and pourable.
Transfer the fondue to a fondue pot set over a low burner flame to keep it warm at the table.
Serve immediately with bread cubes, apple slices, pretzels, and vegetables for dipping.

Notes
For best results, always shred cheese fresh from a block rather than using pre-shredded bags, since anti-caking additives can make the fondue grainy. If the fondue becomes too thick while serving, stir in a small splash of warm wine or broth to loosen it. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Keep the heat low and consistent throughout the entire process — cheese fondue separates when it gets too hot, so patience and gentle stirring are the real keys to a silky, restaurant-quality result.
