Equipment

  • 1 Cutting board For preparing the peel
  • 1 Chef's knife Remove rind
  • 1 Vegetable peeler Peel green skin
  • 1 Large saucepan Cook jam
  • 1 Wooden spoon Stir occasionally
  • 1 Immersion blender Blend until smooth
  • 2 Glass jars Sterilized

Ingredients
  

  • 600 g Watermelon peel Green skin removed
  • 1 tsp Lemon zest Freshly grated
  • 2 tbsp Lemon juice Fresh
  • 200 g Granulated sugar White sugar

Instructions
 

  • Remove the green outer skin from the watermelon peel, leaving the white rind and a little pink flesh.
  • Cut the peel into small cubes.
  • Place the cubes in a saucepan.
  • Add the lemon zest, lemon juice, and sugar.
  • Stir well and let the mixture rest for 30 minutes.
  • Cook over medium heat for 30 minutes, stirring occasionally.
  • Blend the mixture until completely smooth.

  • Return it to the saucepan and cook for another 30 minutes, stirring until thick.
  • Allow the jam to cool slightly.
  • Spoon into sterilized jars and seal.

  • Leave a little pink flesh attached for the best flavor.

  • Stir regularly during the final cooking stage to prevent sticking.
  • The jam will continue to thicken as it cools.
